Ready in less than 30 minutes, these are a quick and easy treat destined to woo all the children in your life.
My four-year-old couldn’t eat these quick enough. Her favorite part was eating the rainbow “beach towel!” I must admit, these sure are cute and they’re also UNBELIEVABLY quick and easy to prepare! Once you have the cupcakes baked, it’s so fast to frost them and add the candy toppings. Due to the artificial colors, these are a rare treat around here. Because my daughter was born in January and always has freezing cold and snowy birthdays here in Salt Lake County, my husband and I wanted to throw her a summer party. In preparation for this summer party, I wanted to experiment and try a few snacks – this being one of them. They sure didn’t disappoint! My kid wanted to eat all the “beach towels” and cupcakes!
My super easy Teddy on the Beach Cupcakes contain a box of white cake mix, graham crackers, cream cheese or white frosting, Teddy Grahams, Airheads Xtremes, Lifesavers Gummies, and parasol picks, and are done in less than a half hour! It may look complicated, but I promise you it is not!
How to make the best Teddy on the Beach Cupcakes
STEP 1: To make these, bake a box of white cake mix as cupcakes, following the directions on the box. While they’re baking, use your hands to break up 3-4 sheets of graham crackers into crumbs in a mixing bowl. This will be the “sand.”
STEP 2: Once the cupcakes are cool, frost the tops with cream cheese or white frosting.
Sprinkle the graham cracker crumbs on top of the frosting immediately. If you wait too long, the frosting will harden and the crumbs won’t stick.
STEP 3: Tear rainbow Air Head strips into thirds, placing one-third of each strip on top of the sand as the “beach towel.”
STEP 4: Place the Teddy Graham on the beach towel and then add a Lifesaver gummy as the “life preserver” and a parasol pick for the “beach umbrella” and VOILA – you will win over ever kid in your neighborhood!
TIP: If you really need them to stick, add a dollop of frosting under the Teddy Graham and Lifesaver so that they will stick.
