Tater Tot Breakfast Casserole contains just the right mix of seasoning, along with crispy oven-baked tater tots, bacon, cheddar, mozzarella, eggs, milk, sour cream, chives, and hot sauce. This and my Monkey Bread make the best weekend and Christmas morning breakfast and both are a total hit with my family every time I bake them. Ingredients in Tater Tot Breakfast Casserole

Tater tots. Use frozen tater tots for this dish.

Cheddar cheese. Freshly grated cheddar cheese tastes the best and is of the highest quality. Avoid using pre-shredded cheddar as it contains additives that prevent the cheese from clumping. The additives interfere with the baking and do not melt. Cabot Creamery’s article reports that ingredients such as potato starch and natamycin keep the cheese from clumping and it doesn’t melt as easily as opposed to grating your own cheese.

Mozzarella. You can use mozzarella or Monterey Jack cheese.

Eggs. Medium or large eggs will work with this recipe.

Milk. Any kind of milk will work although whole milk will yield a creamier dish.

Sour cream. Use full fat sour cream for the best flavor.

Salt. Salt gives this dish the perfect amount of seasoning.

Freshly cracked pepper. Freshly cracked pepper is the best and depending on how much you like pepper, you can use more or less.

Garlic powder. Just a little bit seasons this dish just enough without overdoing it on the seasonings.

Cayenne. Sprinkle some cayenne into this dish which really brings out the flavors.

Hot sauce. You don’t have to use hot sauce, but it provides a zesty flavor that is super flavorful.

Bacon. Make sure to fry your bacon ahead of time so that it’s done when you start making your breakfast casserole.

Chives. Chives or green onions aren’t totally required, but they do give the dish a beautiful, vibrant color as well as add a delicious texture. But, it’s not a big deal if you skip them.

How to make the best Tater Tot Breakfast Casserole

STEP 1: Preheat your oven to 375 degrees F/190 degrees C. Spray a 9×13-inch baking dish with cooking spray.

STEP 2: Pour the tater tots, 1 cup cheddar, and mozzarella into your prepared baking dish and mix with your hands.

STEP 3: Whisk the eggs, milk, sour cream, salt, pepper, garlic powder, cayenne, and hot sauce in a large bowl.

STEP 4: Pour the egg mixture over the tater tot and cheese mixture.

STEP 5: Bake for 45-55 minutes, until golden brown and cooked in the center. Sprinkle the remaining 1 cup cheddar on top and bake for 10-15 minutes, until the cheese bubbles and is melted. Top with the cooked bacon and chives and serve warm. Serve with your favorite salsa or hot sauce.

If you have any leftovers, store them in an airtight container in the refrigerator for up to three days. Reheat in the microwave or bake in the oven at 350 degrees for 20 minutes, or until the cheese is bubbling and melted.

  • 32 oz bag of tater tots frozen
  • 2 cups cheddar cheese freshly grated and divided
  • 1 cup mozzarella cheese freshly grated
  • 8 eggs
  • 1/2 cup milk
  • 1 cup sour cream
  • 1/2 tsp salt
  • 1 tsp black pepper freshly cracked
  • 1/2 tsp garlic powder
  • pinch cayenne
  • 2 tsp hot sauce
  • 6 slices bacon fried and crumbled
  • 3 chives chopped
