Strawberries are packed with antioxidants and vitamin C and according to Healthline’s post, only contain 32 calories per half cup. Healthline’s post reports that strawberries are an excellent source of manganese and plant compounds, which may provide heart and blood sugar control benefits. Strawberries also contain folate and potassium, which is involved in many bodily functions, including regulating blood pressure.
Benefits of Lemons
Lemons are a bright yellow citrus fruit that are packed with vitamin C and fiber. According to Healthline’s article, lemons may support heart health, weight control, and digestive health.
Fiber and plant compounds in lemons could significantly reduce your risk for developing heart disease. For example, one study showed that eating 24 grams of citrus fiber extract daily for 1 month reduced total blood cholesterol levels. Read more about the health benefits of lemons here.
What if I don’t have a popsicle mold?
If you don’t have a popsicle mold, pour the blended strawberry mixture into small paper or styrofoam cups and add popsicle sticks before you freeze them. To make this process easier, add foil over the top of the cups and then stick your popsicle sticks in before freezing. You do not need a popsicle mold to make this recipe although some prefer them.
Pro Tips
If you want more or less popsicles, adjust the amount of ingredients. For example, this recipe makes about 10 popsicles but I have a popsicle mold that holds 12. If I wanted, I could have made slightly more to fill the 12 molds. Alternatively, if you only want 5 rather than 10 popsicles, just divide the ingredients in half.
Ingredients in Strawberry Lemonade Popsicles
Strawberries. Use fresh strawberries for the highest quality popsicle flavor.
Lemons. The acidic nature of fresh squeezed lemon juice mixes in with the strawberry syrup to balance out the sweet taste. It also enhances the flavors of the other ingredients.
Honey. Honey or agave adds a natural sweetener to these popsicles.
Water. Cold water is needed to thin out and dilute the mixture, helping to puree the mixture.
How to make the best Strawberry Lemonade Popsicles
STEP 1: Add the strawberries, lemon juice, honey, and ½ cup water to a blender and puree until smooth. Add more water if the mixture is too thick to blend.
STEP 2: Taste and if too bitter, add more honey.
STEP 3: Pour into popsicle molds.
STEP 4: If you have lids, cover the popsicles with lids. Insert the popsicle sticks.
STEP 5: Freeze for 4-5 hours or until completely frozen.
