How cute are these green St. Patrick’s Day Rice Krispie Treat Balls, stuffed with Lucky Charms marshmallows and rainbow sprinkles?! At first, I was reluctant to make these because I wasn’t so sure my three-year-old girl would want to try them because of the green color. But, I went for it and made them anyway, making sure to throw in some Lucky Charms marshmallows, which are her absolute favorite, and rainbow sprinkles—another favorite of hers! Fast forward two years later, she’s now five years old and still loves her Lucky Charms and St. Patrick’s Day Rice Krispie Treat Balls! When I first made these, my three-year-old daughter (at the time) came home from preschool and saw them, and immediately wanted to eat them! I feel like it was a successful recipe if she’s begging for them. You really can’t go wrong with anything rainbow when kids are involved – they sure love the rainbow sprinkles! Although my husband and I aren’t really into eating sprinkles, our toddler most definitely IS! We love seeing her happy so the sprinkles are okay and thankfully, we can’t really taste them too much! Feel free to omit the sprinkles if they aren’t your thing.
I wanted a deep shade of green so I opted for a combination of yellow and blue food coloring; however, feel free to use green food coloring.
As I was separating the Lucky Charms marshmallows from the cereal, I was wondering who would open the box next to find that all the rainbow-colored marshmallows had disappeared?! That’s one way to get your kids not to want to eat Lucky Charms! You can just blame it on the leprechaun! He must have eaten all the marshmallows out of the box while we were sleeping!

Butter. Unsalted or salted butter will work in this recipe.
Mini marshmallows. Mini marshmallows help keep all the rice krisipies sticking together.
Vanilla extract. Vanilla helps sweeten up this treat.
Yellow food coloring. Yellow food coloring helps to bring out the green hue.
Blue food coloring. Blue food coloring helps green the color.
Crispy rice cereal. Use crispy rice cereal or Rice Krispies for this.
Lucky Charms cereal. Separate the marshmallows from the Lucky Charms cereal.
Rainbow sprinkles. As an optional ingredient, rainbow sprinkles give these green cereal balls color.
How to Make the Best St. Patrick’s Day Rice Krispie Treat Balls
STEP 1: Line a baking tray with parchment paper.
STEP 2: Melt the butter on low heat in a large skillet. Once melted, slowly add the marshmallows a half cup at a time, stirring often to prevent them from burning.
STEP 3: When the mixture is melted, add the vanilla, yellow food coloring, and blue food coloring. Remove from heat.
STEP 4: Stir in the Rice Krispies and mix until well incorporated. Add the Lucky Charms marshmallows and sprinkles and mix until combined.
STEP 5: Allow to cool for a couple minutes until it’s cool enough to handle. Coat your hands with butter and then roll the mixture into 1.5-inch diameter balls and let them cool on the prepared baking sheet.

- 1 drop blue food coloring
- 3 c Rice Krispies cereal
- 1/2 c Lucky Charms cereal marshmallows only; make sure to pick out the marshmallows
- 2 tbsp rainbow sprinkles optional
