Nothing screams fall season like this deliciously comforting Slow Cooker White Chicken Chili. We actually have had a very mild summer, so I’m a little worried about an insanely frigid winter here in Salt Lake County. This delicious gluten free, low carb white chicken chili is so comforting and warm on a cold autumn day and pairs perfectly with my fluffy and moist Corn Bread recipe and with my Alabama Firecrackers. You can serve it with my mouthwatering Air Fryer Tortilla Chips, Fritos, or any other desired chip. We like tortilla strips with lime wedges on our white chicken chili bowls. Not only does my husband love chili, but our four-year-old adores all soups and I knew she would enjoy this dish.

My insanely addicting Slow Cooker White Chicken Chili recipe contains chicken breast, Great Northern beans, sweet corn, chicken broth, diced green chile peppers, onion, salt, pepper, chili powder, oregano, garlic powder, sour cream, and optional garnishes such as chives, cilantro, tortilla chips, lime wedges, cotija, and so on, to add at the end of cooking.

How to make the best Slow Cooker White Chicken Chili

STEP 1: Add the chicken, beans, corn, chicken broth, chile peppers, onion, salt, pepper, chili powder, oregano, and garlic powder to your slow cooker.

STEP 2: Place the lid on top and cook on high for 4 hours or on low for 8 hours.

STEP 3: When it’s done cooking, shred the chicken using two forks.

STEP 4: Stir in the sour cream and serve warm. Serve with optional garnishes.

Can I make this with other meat or vegetarian?

Yes, you can use boneless turkey breast instead of chicken, if you desire. If you’re looking for a vegetarian recipe, omit the chicken and add two more 15-ounce cans of beans.

Can I make it spicy?

Sure, add your favorite hot sauce or toss in a diced jalapeno with some seeds for added spice. If you want even more spice, add some cayenne pepper.
