Nothing screams fall season like this deliciously comforting Slow Cooker White Chicken Chili. We actually have had a very mild summer, so I’m a little worried about an insanely frigid winter here in Salt Lake County. This delicious gluten free, low carb white chicken chili is so comforting and warm on a cold autumn day and pairs perfectly with my fluffy and moist Corn Bread recipe and with my Alabama Firecrackers. You can serve it with my mouthwatering Air Fryer Tortilla Chips, Fritos, or any other desired chip. We like tortilla strips with lime wedges on our white chicken chili bowls. Not only does my husband love chili, but our four-year-old adores all soups and I knew she would enjoy this dish.

How to make the best Slow Cooker White Chicken Chili
STEP 1: Add the chicken, beans, corn, chicken broth, chile peppers, onion, salt, pepper, chili powder, oregano, and garlic powder to your slow cooker.

- 1½ pounds chicken breast
- 2 (15 oz. cans) Great Northern beans can sub cannellini beans
- 1 (15.25 oz. can) can whole kernel sweet corn
- 2 ears corn shucked
- 1 (32 oz. container) chicken broth
- 1 (4 oz. can) diced green chiles
- 1 onion diced
- ½ tsp salt
- 1 tsp pepper
- 1 tsp chili powder
- 1 tsp oregano
- 1 tsp garlic powder
- 1 c sour cream add at the end of cooking
- chives, cilantro, tortilla chips or strips, lime wedges, cotija, and so on, to add at the end of cooking optional garnishes
