Making pancakes for large groups of people is a giant waste of time as you must stand there, flipping hot cake after hot cake, until all of them are done. By the time you finish making all the pancakes, over half of them are already cold. It makes so much sense to just make a large batch and pour them into a baking sheet, and let your oven do the work. The texture is so fluffy and moist—you’ll never go back to making pancakes after you try this method. . Sheet pan meals are the trending thing nowadays and rightfully so. They make food prep so much easier and quicker. Cooking is fun but it’s also labor-intensive. Sheet pan meals such as this delicious breakfast are my new favorite thing. I love how as part of this recipe, all you really need is a box of pancake mix – although homemade butter and maple syrup will definitely add to the flavors!
Ingredients in Sheet Pan Pancakes
You’re going to be shocked at how easy these are to make! The core ingredients include pancake mix and following the directions on the pancake mix box, additional items could include water or eggs and oil. I use a basic pancake mix that only requires water so I just mix the pancake mix with water and let it sit for a few minutes.
If you feel like mixing in any fruit or nuts, you add them to the batter and mix them well to combine. There are endless variations of toppings as described below. You can also keep it basic and not add any mix ins or toppings aside from maple syrup.
Variations
Feel free to add different mix-ins and toppings to your sheet pan pancakes. We used blueberries and bananas in ours. The taste of cooked blueberries is one of my favorites! They’re fruity and sweet and packed with powerful healthy antioxidants!
This recipe is so versatile as you can add strawberries, raspberries, peeled and chopped apples, cinnamon, chocolate chips, white chocolate chips, nuts, whipped cream, nut butters, maple syrup—the list goes on and on.
If you’re looking for gluten free pancakes, buy a gluten free pancake mix. I’ve cooked with these many times and they taste absolutely delicious. If you’re following a vegan diet, just be sure that the pancake mix you buy doesn’t call for adding any eggs.
How to Make the Best Sheet Pan Pancakes
STEP 1: Preheat your oven and coat a baking sheet with non-stick cooking spray.
STEPS 2 and 3: Make your classic pancake batter and let it sit for a few minutes. If you’re adding any fruit or nuts, mix them in.
STEP 4: Pour the batter onto the prepared baking sheet and place any additional toppings in it.
STEP 5: Bake for 15 minutes.
STEP 6: Brush melted butter on top and serve with your favorite maple syrup, whipped cream, nut butters, or desired toppings.
