Three-ingredient Rainbow Popsicles are every kid’s summer frozen dessert dream come true! Just ask my five year old who has been begging me to make rainbow popsicles ever since she saw the mom on Cocomelon make them. If you have toddlers, I’ll bet you know exactly what episode I’m talking about! I’m not about to blend strawberries, oranges, pineapple, kiwi, and so forth to make rainbow popsicles when I can quickly and easily make my three-ingredient rainbow popsicles! Nothing tastes better on a hot summer day than an iced cold, refreshing rainbow popsicle!

This is such a fun project for kids this summer – let them help make a colorful and vibrant frozen dessert that is destined to be so beautiful and fun to eat (just ask my kid who had a huge smile when she saw how colorful these rainbow popsicles are!). My daughter had to spread the word and tell the neighborhood that her mom made rainbow popsicles. Last night, all the neighborhood kids came by, asking for one of my rainbow popsicles. These are gluten free and vegetarian, and only take 10 minutes to make, making them one quick frozen dessert recipe!

My easy rainbow popsicle recipe contains instant vanilla pudding, milk, and food coloring, and takes less than 10 minutes to make! Ingredients in Rainbow Popsicles

Instant vanilla pudding. Use one 4-serving box of instant vanilla pudding in this popsicle recipe.

Milk. Use 2% or whole milk for the creamiest flavor.

Food coloring. Use any combination of food coloring you wish. We used red, orange, yellow, green, and blue, similar to a rainbow. My go-to food coloring is this vibrant Ann Clark food coloring set.

You will need 3 oz. paper cups to make this recipe. We like these cups best.

How to make the best Rainbow Popsicles

STEP 1: Pour the milk into a large bowl. Whisk in the pudding mix.

STEP 2: Pour the pudding into 5 bowls, spreading the mixture out evenly.

STEP 3: Add food coloring to each bowl. We used red, orange, yellow, green, and blue. Here’s the food coloring we use; I like how vibrant the colors are. Stir the food coloring until the mixture is well incorporated.

STEP 4: Use a spoon or tablespoon to pour approximately 1 tablespoon of each color pudding into your cups, filling the cups up to the top. We poured pudding colors in the following order: red, orange, yellow, green, and blue.

STEP 5: Place the cups in a loaf pan. Add squares of foil over the tops of each cup. Use a knife to cut slits into the tops of the foil on each cup. Stick a popsicle stick inside. Freeze for at least 6 hours.
