My MIL’s Banana Bread

This is my mother-in-law (MIL) Eileen’s banana bread recipe—and it’s the most delicious banana bread I’ve ever tasted, so I’m sharing it here with you. I’ve cooked and eaten many different blends of banana bread over the years and this one is the best! The only ingredient I added was cinnamon.

My MIL is Hawaiian and was born and raised on the Big Island of Hawaii, so I’m not sure if this is a Hawaiian version of banana bread, but it is the best-tasting, easiest recipe and trust me—I’ve made several! By the way, I’m joking about it being a Hawaiian version of banana bread! I’ve never heard of Hawaiians having their own version of banana bread. Maybe I should research this topic! In any case, it’s THE MOST delicious and moist banana bread I’ve ever tasted!

After they’ve cooled, I wrap the banana loaves in foil and let them cool in the refrigerator. We prefer ours to be cold just the way my MIL always makes them when she visits us, so we store them in the refrigerator, and they don’t last very long around here! These are a popular breakfast and snack food in our house. I love eating cold banana bread topped with my homemade butter! The mouthwatering butter and bread combo is so creamy and sweet, and just melts in your mouth!

My MIL’s Banana Bread recipe contains ripe bananas, butter, eggs, baking soda, salt, granulated sugar, all-purpose flour, cinnamon, and is done in about an hour. It makes the perfect breakfast or dessert, and is family and kid friendly (not to mention, makes your house smell SO GOOD while it’s baking!).

Ingredients in My MIL’s Banana Bread

Bananas. Ripe bananas work best in this recipe as they’re easiest to mash and taste the sweetest.

Butter. Butter provides flavor and texture in this dessert bread recipe.

Eggs. Eggs offer nutrition and help bind the ingredients.

Baking soda. Baking soda is fast-acting, provides a bitter taste, and helps the dough rise in this banana bread recipe.

Salt. Salt enhances the flavors of the other ingredients in this recipe.

Sugar. Granulated or white sugar provides a softer texture as it holds onto water, providing structure while helping to raise and lift the dough.

Flour. All-purpose flour is needed as a binding agent in this recipe. According to Martha Stewart’s article, all-purpose flour can be used for anything from pie pastry to cookies, scones to some breads.” All-purpose flour works wonders in this recipe to produce the softest, fluffiest, moistest banana bread.

Cinnamon. Ground cinnamon provides a spicy flavor that blends in perfectly with banana bread. Cinnamon provides numerous health benefits as it contains powerful medicinal properties. According to Healthline’s post, cinnamon is packed with antioxidants, may have anti-inflammatory properties, and could protect against heart disease.

How to make the best banana bread

STEP 1: Preheat your oven and grease 2 loaf pans with butter and flour.

STEP 2: Melt the butter in a large bowl.

STEP 3: Add the bananas to the bowl, and mash them with a fork.

STEP 4: Add the eggs, baking soda, salt, sugar, and flour and mix with a hand mixer. Add the cinnamon and mix well.

STEP 5: Pour the mixture into the two prepared loaf pans and bake until a toothpick inserted in the center comes out clean.

STEP 6: Let the loaves cool for 10-15 minutes then use a rubber spatula to loosen each loaf from the pan. Carefully turn the pan upside down on a wire rack to cool for about an hour. Wrap each loaf in foil and serve warm or cold.

  • Grease 2 loaf pans with butter and flour. Tap off excess and set aside.
  • Melt the butter in a large bowl.
  • Add the bananas to the bowl, and mash them with a fork.
  • Add the eggs, baking soda, salt, sugar, and flour and mix with a hand mixer on medium to high for 2 minutes until well combined. Add the cinnamon and mix until incorporated.
  • Pour the mixture into the two prepared loaf pans and bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the loaves cool for 10-15 minutes then use a rubber spatula to loosen each loaf from the pan. Carefully turn the pan upside down on a wire rack to cool for about an hour. Wrap each loaf in foil and serve warm or cold.
