My husband and I are trying hard to lose weight so he asked for a lot of keto, low-carb dinners—this being one of them. He loves meat and keto works for him so I’m digging up all the meat recipes I can find to help him meal prep. I, on the contrary, am not a huge meat eater and am giving him many new low carb, protein packed meals to help him shed some pounds. My hamburger steak recipe contains pork rinds, heavy cream, ground beef, Worcestershire sauce, salt, pepper, parsley, and extra virgin olive oil. The gravy recipe calls for butter, onion, water, heavy cream, and beef bouillon while the sides contain nutrient-packed broccoli and cauliflower rice.

How to make the best Low-Carb Hamburger Steak and Gravy with Broccoli and Cauliflower Rice

STEP 1: Make a panade by soaking the pork rinds in the heavy cream until absorbed, about 10 minutes.

STEP 2: Place the ground beef in a large bowl. Sprinkle the Worcestershire sauce, salt, and pepper, and parsley over the meat. Mix with a wooden spoon until well combined. Add the pork rind and cream mixture and mix well.

STEP 3: Divide the seasoned meat into 4 even balls and flatten them into patties. Season the patties with salt and pepper. The more pepper you add, the more flavor your meat will have.

STEP 4: Add the olive oil to a saucepan and swirl the pan to coat. Place the patties on the prepared pan and don’t let them touch. Cook for about 4 minutes on each side. Remove the patties and cover loosely with foil.

STEP 5: Turn the heat down to medium and add the butter. Add the onion and cook until translucent, about 3 minutes. Add the water, 1/3 cup heavy cream, and bouillon, and stir. Add in any juices from the steaks and bring to a simmer, reducing the sauce until it thickens. Season with salt and pepper.

STEP 6: Add the sauce on top of each hamburger steak and serve warm. Divide the cooked broccoli and riced cauliflower into four equal portions and serve on the side.

What is a Panade?

According to Jessica Gavin’s article, a panade is one way to keep ground meat moist and flavorful. When we bake, grill, or braise meat that needs to be well done, we risk drying out the meat and losing moisture. A panade is a mixture of starch and liquid added to ground meat and can include starches like pork rinds, breadcrumbs, panko, or crackers. To create the panade, you need to mix the starch with a liquid such as heavy cream.

Gravy
