KFC Copycat Baked Potatoes

This is a popular family dinner recipe around here and rightfully so! You really can’t go wrong with potatoes, chicken nuggets, cheese, and corn! My husband pointed out that when I made these for the blog, I forgot the gravy. I highly recommend using gravy. If you don’t use it, then use extra cheese or they’re a bit too dry in our opinion.

My mouthwatering KFC Copycat Baked Potatoes contain potatoes, cheddar cheese, corn, chicken nuggets, pepper, and as an optional topping, brown gravy. It’s the ultimate comfort food dinner and only takes about an hour to make. It’s not only a wonderful family dinner, but is great for serving guests and makes great leftover food as part of meal prep.

Ingredients in KFC Copycat Baked Potatoes

Potatoes. Russet potatoes work best in this recipe. If you like, you can use gold or red potatoes.

Cheddar cheese. Freshly grated cheddar cheese tastes best in this recipe. Pre-shredded cheeses sold at the supermarket contain additives and chemicals that prevent it from clumping; avoid buying pre-shredded cheddar.

Corn. We use frozen corn as it works just fine in this recipe. Feel free to also use fresh or canned corn. If you use canned corn, make sure to drain it.

Chicken nuggets. We love Tyson chicken nuggets that are sold in the frozen aisle of our grocery store. Any brand of chicken nuggets will work. You can even go to Chick-fil-A or another similar chicken restaurant and buy chicken nuggets if you so wish.

Pepper. Freshly cracked black pepper adds spice and flavor to this dish. If you don’t have freshly cracked pepper, use black pepper.

Brown gravy. Although optional, these KFC Copycat Baked Potatoes taste insanely delicious topped with brown gravy.

How to Make the Best KFC Copycat Baked Potatoes

STEP 1: After washing the potatoes, poke a fork in them a few times so that they cook all the way through. Cover each one with foil and bake for one hour, or until tender.

STEP 2: When the potatoes have 15-20 minutes left to cook, prepare the chicken nuggets by spraying them with non-stick cooking spray and placing them in the air fryer at 380° F for 6 minutes. After the 6 minutes are up, turn them over and spray the other side. Cook for 6 minutes. Cut each nugget into quarters (in half, then in half again, making four smaller pieces total).

Alternatively, if you don’t have an air fryer, cook them in the oven at 400° F for 6 minutes on each side, spraying each side before they are flipped over.

STEP 3: Top each potato with 1/3 cup grated cheddar. Place in the microwave and heat for 1 minute to melt the cheese. Add 3-4 tablespoons corn on top of each potato before adding the chopped chicken from three nuggets (12 total pieces) onto each potato. Add pepper to taste. Drizzle with warmed brown gravy.
