It’s no surprise that almond flour is a key ingredient in this healthy low carb keto recipe as it’s known to be low in carbohydrates and sugar while being high in fiber and healthy fats. This leads to it being released more slowly into the blood which can help those with diabetes to successfully manage glucose levels.

Almond flour is gluten free, making it great for those with celiac disease or following a gluten free diet.  According to Medical News Today’s article, almond flour is linked to reduced cholesterol levels as well as reduced risk of heart disease. Almond flour is made from almonds and as such are high in vitamin E, magnesium, and fiber, which help prevent oxidative stress known as free radicals (which occur from daily living in modern life) and help prevent cancer. Ingredients in Keto Pigs in a Blanket

Mozarella. Mozarella binds to help form the dough.

Almond flour. Almond flour adds texture and keeps the dough stretchy, enabling it to rise during baking.

Baking powder. Baking powder is a leavening agent that reacts with liquids.

Salt. Salt enhances the flavors of the other ingredients.

Egg. An egg helps bind the ingredients together.

Beef hot dogs. Use all-beef hot dogs for the best quality.

Everything bagel seasoning. Everything bagel seasoning is an optional topping if you like this type of seasoning.

Do I have to use Everything Bagel Seasoning?

No, you can use any toppings you wish such as sesame seeds, poppy seeds, onion flakes, salt/pepper, and so forth instead of the bagel seasoning.

How to make the best Keto Pigs in a Blanket

STEP 1: Preheat the oven and coat a baking sheet with cooking spray.

STEP 2: In a large microwave-safe mixing bowl, add the mozzarella and heat in the microwave for 1 minute. Mix with a wooden spoon, and if it’s not melted, heat in 30 second intervals in the microwave, stirring in between, until melted.

STEP 3: Stir in the almond flour, baking powder, and salt. Add the egg and continue to mix. Knead with your hands until the dough is completely mixed together.

STEP 4: Turn the dough out on the prepared baking sheet. Roll the dough into a ball, then use your hands to flatten it as much as possible, aiming for ¼-inch thickness all around. Split the dough into 6 pieces and cover each hot dog with it, leaving about ½ inch on each end. Sprinkle everything bagel seasoning on top.

STEP 5: Bake in the oven for 12-16 minutes or until golden and crispy. Serve warm with your favorite hot dog toppings. Serve warm with ranch dressing, low carb ketchup, fry sauce, or mustard.
