Ingredients in Hot Smoked Gouda Bacon Dip

Cream cheese. Rather than waiting for two hours for the cream cheese to soften, heat it in a microwave safe bowl for one minute, stirring after. If it’s not soft enough to mix after one minute, heat in 20-second increments, until it’s soft enough to mix with the sour cream. Be sure to use full fat cream cheese as low fat and nonfat cream cheese will not work with this recipe.

Sour cream. Be sure not to skimp – use full fat sour cream and avoid using low fat and nonfat versions.

Diced green chiles. One 4 oz. can of diced green chiles gives this appetizer an unbeatable kick. Alternatively, you can sub with a 4 ounce can of diced jalapeño peppers.

Smoked gouda. Freshly grate smoked gouda for this dish.

Bacon. Fry the bacon ahead of time so that when it’s time to whip this dish together, you have everything cooked.

Black pepper. Freshly cracked black pepper gives this dip a spicy flavor.

Crushed red pepper. A bit of crushed red pepper helps season this dip.

Cayenne. Just a pinch packs a lot of flavor.

Chives. Fresh chives provide a vibrant, green color and a delicious crunch.

How to Make the Best Hot Smoked Gouda Bacon Dip

1). Preheat your oven to 375 degrees F/ 190 degrees C. Spray an 8×8 baking dish with non-stick cooking spray.

2). Add the cream cheese to a large microwave-safe bowl and heat for 1 minute. Stir after and if not melted enough to mix with the sour cream, re-heat in the microwave in 20 second increments, until it’s melted enough to mix with the sour cream.

3). Stir in the sour cream and mix until well combined. Pour in the green chiles and mix until combined.

4). Stir the gouda, half the bacon, black pepper, crushed red pepper, and cayenne into the bowl and mix well to combine.

5). Pour the mixture into the greased baking dish and bake for 25 minutes, or until bubbly and golden brown.

6). Remove from the oven. Sprinkle the other half of the bacon and the chives on top. Serve warm.

  • 16 oz Full fat cream cheese (two 8oz packages)
  • 1 1/2 cups Sour cream
  • 3 cups Gouda cheese freshly grated
  • 16 oz Bacon fried and crumbled
  • 1 tsp Black pepper freshly cracked
  • 1/2 tsp Red pepper flakes
  • 2 tbsp Chives chopped
