Ingredients in Hot Cocoa Marshmallow Cup Cookies
Fudge Striped Shortbread Cookies. You can buy Keebler brand or generic striped shortbread cookies for this recipe.
Marshmallows. Buy marshmallows which make the hot cocoa “cup” on the cookie.
Chocolate icing or frosting. The chocolate icing/frosting will help bind the marshmallows to the cookie as well as serve as the hot chocolate on top of your hot cocoa “cup.”
Miniature marshmallows. You’ll need mini marshmallows to place in the top of your hot cocoa “cup.” I diced them into several pieces.
Toys and Games Best SellersSmall candy canes. To cut the longer sides of the candy canes, use a knife. Although it may seem like they will break, they do not. Learn from my lesson – I tried using kitchen scissors and they shattered into several pieces, so opt for a knife.
Christmas tree sprinkles. I found my large Christmas tree sprinkles at Walmart, but you can also try Michaels or Amazon.

Once diced, the mini marshmallows are rather sticky, making them difficult to stick onto the tops of the hot cocoa cups. After you dice up the mini marshmallows, let them air dry for at least 45 minutes so that they dry up and are easier to work with and place over the hot cocoa cups.
Before you begin, prep everything. Grab a knife and chop the long parts of the candy canes off. Also, be sure to chop up the mini marshmallows into tiny pieces, allowing them time to dry, to expedite the cookie process.
How to Make the Best Hot Cocoa Marshmallow Cup Cookies
1). Line a baking sheet with parchment paper. Place the striped shortbread cookies face up on the lined baking sheet.
2). Squeeze chocolate frosting on the bottom of a marshmallow, then place it over the center of the shortbread cookie.
3). Dab frosting on both bottoms of your candy cane piece and then stick it into the side of the marshmallow to form a cup handle. Below is a sample of what it should look like.

5). Dab chocolate frosting on the center front of each marshmallow “cup,” then stick a Christmas tree sprinkle onto it. You may need to hold it for a few seconds to secure it. Let the frosting dry for at least an hour before serving.
