You can use any kind of waffle maker to make this recipe and some waffle makers may take longer than others. This is a dairy free, gluten free, vegetarian recipe, that can be eaten for breakfast, brunch, or dinner.
Whatever you do, just don’t forget to spray your waffle maker with cooking spray, or you will be spending a lot of time tirelessly cleaning your waffle maker (trust me, I’ve been there multiple times and it’s no fun!). My mouthwatering hash brown waffle recipe contains yellow potatoes, water, extra virgin olive oil (EVOO), garlic, salt, pepper, paprika, cayenne, and eggs, and is done in less than 25 minutes!
Benefits of Potatoes
Potatoes are a great source of vitamins and minerals, and are rich in flavonoid and carotenoid compounds. According to Healthline’s article, these compounds act as antioxidants in your body by neutralizing harmful free radicals. A test tube study found that the antioxidants in potatoes may stop the growth of colon and liver cancer cells. Potatoes may improve digestive health and are naturally gluten free.
Ingredients in Hash Brown Waffles
Yellow potatoes. Yellow potatoes are waxy, creamy, and are the best option for this recipe as they are naturally buttery and don’t absorb as much water as other potatoes.
Extra virgin olive oil. Buy high quality extra virgin olive oil for the best taste. If you don’t have any, you can use regular olive oil.
Garlic cloves. Fresh garlic cloves are used as a flavoring agent and bring out the best in the yellow potato mixture.
Salt. Salt enhances the flavors of the potatoes and other ingredients.
Pepper. We prefer freshly cracked black pepper but regular black pepper will suffice.
Paprika. A small amount of paprika goes a long way and adds a mild and sweet flavor to the waffles.
Cayenne. Just a pinch of cayenne is enough to enhance and spice up the flavors.
Eggs. Eggs provide elasticity and binding and help keep the dough together.
How to Make the Best Hash Brown Waffles
STEP 1: Preheat your waffle iron and spray it with nonstick cooking spray. Add the grated pound of yellow potatoes to a large bowl. Pour cold water over the potatoes—just enough to cover. Soak the potatoes in water for 3-5 minutes. Drain the water and rinse to remove the starch from the potatoes. Either squeeze the water out of the potatoes or pour them onto a kitchen towel. Use a second towel to place on top, pressing down to dry the potatoes.
STEP 2: In a large bowl, combine the potatoes with extra virgin olive oil, garlic cloves, salt, pepper, paprika, and cayenne. Stir the two lightly beaten eggs into the mixture and mix well to combine.
STEP 3: Pour half the batter into the prepared waffle iron. Cook until the potatoes are crispy and golden, about 10 minutes. Repeat with the remaining mixture.
