Half-Dipped Chocolate Peanut Butter Ritz Cracker Sandwiches

This is one of my favorite Christmas recipes because it’s SO EASY and is done in just 10 minutes! If you’re short on time, then this is the snack you need to make for your holiday party! They look so fancy and sophisticated but trust me – they’re super easy! No baking is needed to make these delicious Half-Dipped Chocolate Peanut Butter Ritz Cracker Sandwiches which makes me happy. If you want to fully dip your Ritz cracker sandwiches, feel free to. I liked the look and taste of them half dipped. All you’ll need are Ritz crackers, peanut butter, chocolate almond bark, and, optionally, coarse sea salt to sprinkle on top.

Ingredients in Half-Dipped Chocolate Peanut Butter Ritz Cracker Sandwiches

Ritz crackers. Use toasted almonds for the best taste. Feel free to use salted or unsalted almonds, but we prefer salted.

Peanut butter. I use creamy peanut butter for this recipe. You can use chunky peanut butter if you like. Avoid using natural peanut butter as this recipe will not work with natural peanut butter.

Chocolate almond bark. I recommend using almond bark as opposed to chocolate chips as it melts quicker and is more effective. Chocolate chips are meant to retain their shape so when in doubt, opt for chocolate almond bark.

Coarse sea salt. As an option, you can sprinkle coarse sea salt on top of your half-dipped Ritz cracker sandwiches. Feel free to omit this if you like.

How to Make the Best Half-Dipped Chocolate Peanut Butter Ritz Cracker Sandwiches

1). Line a baking sheet with parchment paper.

2). Place the crackers on the parchment paper-lined baking sheet.

3). Evenly spoon the peanut butter on top of half of the crackers.

4). Gently press a cracker on top of the peanut butter coated cracker, forming a Ritz cracker sandwich.

5). Heat the chocolate almond bark in a microwave safe bowl for 1 minute. Stir and place in the microwave for 20-30 second increments, stirring in between, until melted.

6). Use your hands or a spoon to dip half of the Ritz cracker sandwich in the melted chocolate, making sure to coat the sides and back of the cracker sandwich. Tap off excess and place on the parchment paper. Immediately sprinkle sea salt on top and let set.

Do not use natural peanut butter, as it will not work. I prefer Jif.
