An adorable and creative Fruit Rainbow with a Pot of Gold and Homemade Strawberry Fruit Dip is the perfect way to celebrate St. Patrick’s Day and the onset of spring with your friends and family. It’s a gluten free and healthy vibrant snack that is popular among toddlers, kids, and adults. I made this yesterday and it was eaten within 30 minutes! My three-year-old picky toddler went straight for the mini marshmallows, but she did dive into the strawberries, pineapple, and grapes too! This is the best snack for a St. Paddy’s Day party or gathering and is absolutely irresistible, especially when combined with the insanely delicious strawberry fruit dip!

Yesterday was my first time ever making strawberry fruit dip and let’s just say it was the most delicious dip my husband and I have ever tasted! It’s so easy and only requires two ingredients! You’ll be so happy you made this. Ours was devoured in about 30 minutes, along with all the sliced fruit.

Ingredients in Fruit Rainbow with a Pot of Gold & Homemade Strawberry Fruit Dip

Strawberries. Strawberries make up the outer part of the fruit rainbow. Strawberries are nutrient rich and can boost your memory, strengthen your immune system, and protect your heart.

Oranges. You can use cuties/mandarin oranges or navel chop up Navel oranges.

Pineapple. Use real pineapple or canned. Pineapple is rich in vitamin C and helps with immune response and metabolism.

Grapes. Green grapes make up the green portion of the rainbow. You could also use kiwi fruit. According to Healthline’s post, green grapes are packed with potassium which may help lower blood pressure. They may also help reduce cholesterol.

Blueberries. Blueberries add nutrition and flavor. According to Healthline’s article, blueberries are one of the top antioxidant foods and have been shown to directly release antioxidants in your body.

Grapes. Red grapes make up the indigo or purple part of the rainbow.

Ingredients
  

  • 3 c strawberries sliced vertically
  • 3 oranges peeled and sliced
  • 1/2 can pineapple chunks drained
  • 2 c green grapes
  • 1 c blueberries picked through
  • 2 c red grapes
  • 2 c mini marshmallows
  • 10.6 oz Rolos bag of

Fruit Dip

  • 7.5 oz. strawberry cream cheese softened to room temperature
  • 7 oz. Jet-Puffed Marshmallow Creme

Instructions
 

  • Chop the fruit and arrange it into a rainbow on a large board or dish.
  • Pour the mini marshmallows into a pile under the left side of the rainbow.
  • Pour the Rolos into a black bowl on the right side, under the rainbow.
  • To make the fruit dip, mix the cream cheese and marshmallow creme together with a spoon and place in a bowl with a lid in the refrigerator for at least one hour. Serve chilled with the fruit.

Notes

Store the fruit and the fruit dip in the refrigerator in airtight containers for up to three days.
