These spooktacular eyeball cookies are creepy and perfect for a Halloween party or for baking cookies with the kids! They’re so easy and involve a simple sugar cookie recipe followed by white frosting and lots of other goodies that scream Halloween! Simple recipes that toddlers can help create are my favorite kind of baking recipe and these cookies are no exception!

My four-year-old daughter helped mommy make these cookies (she loves stirring cookie dough) – just like she helped me make these festive Oreo Monster Eyeball Pops. She also helped me place Junior Mints on the cookies, making it a memorable mother-daughter baking experience, just like I did with my mom growing up! Eyeball Cookies contain a mouthwatering homemade sugar cookie dough, white frosting, food coloring, Junior Mints, and Red Vines licorice, and are done in less than 25 minutes, from start to finish! There aren’t too many festive Halloween cookie recipes that are done in under a half an hour, so these are perfect if you’re in a hurry but still want to bake something spooky for a Halloween party or on Halloween night!

Ingredients in Eyeball Cookies

Sugar cookies. You can buy sugar cookie dough or make your own; we prefer to make our own from scratch.

White frosting. Make your own or buy it – it can be cream cheese, white, or vanilla frosting.

Food coloring. Pick your favorite colors as your eye colors. Here’s my favorite food coloring!

Junior Mints. The pupil of each eye is a Junior Mint candy.

Red licorice. Use a sharp knife to slice red licorice such as Red Vines into tiny pieces and make them fit onto the edges of each cookie to form eye veins.

How to make the best Halloween Eyeball Cookies

COOKIES

STEP 1: Preheat oven to 375° F. In a medium bowl, stir the flour, baking soda, baking powder, and salt together; set aside.

STEP 2: In a large bowl, use a hand mixer or stand mixer to beat the butter and sugar until smooth. Add the egg and beat it to combine. Add the vanilla and beat to combine all ingredients. Slowly add the dry ingredients and beat everything together until smooth.

STEP 3: Use cookie cutters or roll into two-tablespoon-sized balls. Place on ungreased baking sheets.

STEP 4: Bake 8-10 minutes until cooked and golden. Let sit on baking sheets for at least 2 minutes before transferring to a cooling rack.

TOPPINGS

STEP 5: Once the cookies have cooled, frost them white, fully covering each cookie to the edges.

STEP 6: In separate bowls, mix food coloring with white frosting. Put the frosting in a sandwich bag and cut a slit in the bottom. Pipe quarter-sized blue or purple (or other eye color) dollops on each cookie. Add a Junior Mint to the center of each colored eye. Cut small pieces of red licorice and place it over the white part of the eye for eye veins.
