Easy Heirloom Tomato Galette

I first attempted to make this heirloom tomato galette over five months ago but when I tried to make it, I made the dough from scratch and it didn’t turn out right. I’ve always made galettes from puff pastry so I figured I needed to get back to basics and remake my heirloom tomato galette (before summer ended) but this time, using frozen puff pastry! My neighbors brought over lots and lots of heirloom and regular tomatoes harvested straight from their garden, so it was the perfect time for me to redo the heirloom tomato galette (with basil) that I tried to make months ago.

Behold, I am pleased with the results and just as I thought, the puff pastry turned out as delicious as could be. Topped with seasoned, garden-grown heirloom tomatoes, feta, oregano, and fresh basil, it smelled like a Margarita pizza was baking in my oven! My husband refers to this as an inside-out pizza and is really seems to be just that!

My insanely addicting Easy Heirloom Tomato Galette is the perfect way to use those heirloom tomatoes; my recipe contains heirloom tomatoes, salt, puff pastry, feta cheese, oregano, egg, and basil and is done in about 35 minutes. Dipped in my mouthwatering Homemade Ranch Dressing, this is one recipe you won’t want to skip!

I love vegetarian food and this sure makes one delightful vegetarian appetizer, lunch, and dinner and the fact that it’s nutrient and flavor packed is an added bonus!

Benefits of Tomatoes

Tomatoes are packed with vitamin C and lycopene, which is an antioxidant that has been studied extensively for its health benefits. In fact, Healthline’s article mentions that observational studies have noted links between tomatoes and fewer incidences of prostate, lung, and stomach cancers. Tomatoes are considered beneficial for skin health and are high in lycopene which is a plant compound linked to improved heart health, cancer prevention, and more.

Ingredients in Easy Heirloom Galette

Heirloom tomatoes. Heirloom or other large sized tomatoes work best in this recipe.

Salt. Salt enhances the flavors of the tomatoes.

Puff pastry. I always buy Pepperidge Farm brand puff pastry in the freezer aisle of the grocery store although any brand of puff pastry will suffice.

Feta cheese. Make sure to crumble your block feta or use crumbled feta in this recipe.

Oregano. Oregano provides aroma and seasons the tomatoes just right.

Egg. Egg provides nutrition, flavor, and is used to make the pastry turn crisp.

Basil. Fresh basil provides aroma, taste, and nutrition to this galette recipe.

My delicious Easy Heirloom Tomato Galette combines the flavors of tomatoes and basil with cooked over feta and a crispy and flaky dough. It makes a fabulous quick weeknight dinner and is packed with flavor and nutrients. It’s a versatile recipe so if you’re not feeling basil, opt for jalapenos, parsley, or another type of topping. This reminds me so much of a quick and easy pizza recipe and the fact that it’s vegetarian makes it a win win for my picky kid! What can I top my galette with?

As far as the cheese goes, I recommend Pecorino Romano cheese for this tomato galette recipe. This aged Italian cheese is similar to Parmesan, but with more salt and flavor. It really takes the tomato galette to an unbeatable level of taste!

You can find Pecorino Romano in American grocery stores in blocks or grated. If you can’t find any Pecorino Romano, then substitute Parmesan. It will still taste amazing either way.

I don’t recommend topping the galette with pepperoni or ham as it overpowers the taste of the juicy tomatoes and feta. Keep it simple and if you like, top with Pecornio Romano or fresh Parmesan. Feel free to add crushed red pepper flakes if you’re looking for extra spice.

Benefits of Basil

According to the Cleveland Clinic’s article, basil contains nutrients and compounds that can help prevent chronic diseases such as diabetes, cancer, arthritis, and heart disease, just to name a few! Basil possesses antibacterial and anti-inflammatory properties and may boost mental health, improve blood sugar health, enhance cardiovascular and immunity levels as well as improve neurocognitive function.

Basil is antioxidant rich and is packed with natural compounds that protect your cells that become damaged from oxidative stress, including free radicals. Oxidative stress can lead to cancer, heart disease, cataracts, and inflammatory diseases like arthritis. Basil has been shown to prevent cancer growth, helps manage cholesterol, and has been shown to improve high blood pressure levels in those with hypertension. It’s also a mood enhancer as it’s been show to enhance mood, including short-term memory and attention as well as reduce anxiety and stress.

How to make the best Easy Heirloom Tomato Galette

STEP 1: Preheat your oven to 405° F. Line a baking sheet with parchment paper, cutting it to fit.

STEP 2: Place the sliced tomatoes on a cutting board. Sprinkle with just enough salt to cover the tops of the tomato slices. Use your fingers to run the salt into the tomato. Let sit for 10 minutes to allow the salt and juices to marinate.

STEP 3: Roll the pastry out on the parchment paper-lined baking sheet to about ¼-inch thickness.

STEP 4: Pour the feta cheese in the center of the puff pastry followed by layers of the tomatoes, leaving 2 inches around the edges.

STEP 5: Evenly sprinkle the oregano over the top.

STEP 6: Fold about 2 inches of the edges of the pastry dough into the center. Use a pastry brush to brush the pastry dough edges with the egg wash.

STEP 7: Bake in the oven for 20-24 minutes or until the edges are golden brown and crispy.

STEP 8: Remove from the oven and let cool for 5-10 minutes. Sprinkle fresh basil on top.
