Light and refreshing Cucumber Hummus Bites are a healthier appetizer snack that your family and friends can enjoy. They also make a perfect party appetizer snack as you can easily just grab and go with each bite. Stick a toothpick in them for an easier hors d’oeuvre starter appetizer that many can just grab and walk away with. The best part about this easy snack recipe is that it only takes 10 minutes to make and there’s no cooking required. My easy recipe calls for English cucumbers, hummus, smoked salmon, and green onions. When I’m surrounded by Christmas baking this time of year, it’s so nice to have a snack that’s easy and healthy near me.

They make wonderful cocktail party hors d’oeuvre for your swanky holiday party or celebratory gathering. They’re also kid and family friendly as my four-year-old picky toddler and husband devoured them all in about five minutes! My recipe is low calorie, low carb, gluten free, and absolutely delicious. In fact, it’s part of the Mediterranean diet and is a healthy bite sized snack. Each cucumber bite only contains 10 calories and an irresistible crunch that will have you coming back for seconds, thirds, and fourths! Ingredients in Cucumber Hummus Bites

English cucumber. Buy an English cucumber and slice it into pieces. Alternatively, you can use a regular cucumber. According to the Cleveland Clinic’s article, cucumbers promote gut health, lower your risk of heart disease, and are a natural part of a Mediterranean diet. Cucumbers are packed with water; fiber; vitamins A, K, and C; potassium, and; calcium.

Hummus. Use any type of hummus you like. We prefer organic hummus from Costco but any kind will suffice.

Smoked salmon. You can find smoked salmon at most grocery stores. We found some at Walmart and used about 1 ounce.

Chives. Chopped chives give the cucumber hummus bites some extra flavor and color.

How to Make the Best Cucumber Hummus Bites

1). Arrange the sliced cucumbers on a plate.

2). Evenly spoon the hummus on top of the cucumber slices.

3). Top with smoked salmon and chives. Serve cold.
