I have been a full-time professional and I’ve been a stay-at-home mom. I’ve also done both where I worked full-time and raised my kid. Both stay-at-home parenting and working full-time is time-consuming and there’s nothing better than adding your ingredients to your Crockpot or slow cooker in the morning, turning it on, and letting the Crockpot do the work for you. If you’re a busy person like me, then you want to make a healthy family meal quickly. At least I know I do!

Benefits of Celery

Celery, onion, and carrots help keep this recipe healthy and help it to taste delicious. In fact, the fiber in celery can benefit the digestive and cardiovascular systems as celery contains antioxidants that may help to prevent disease. According to Medical News Today’s article, celery contains a plant compound known as apigenin, which is used in traditional Chinese medicine as an anti-inflammatory, antibacterial, antiviral, and antioxidant agent. It may also contain properties that help fight cancer.

According to authors of a 2016 analysis, laboratory tests have shown that apigenin may contribute to apoptosis, a type of programmed cell death, which could potentially make it useful as part of cancer treatment.

In another study conducted in 2015 in mice, researchers found that apigenin and apigenin-rich diets reduced the expression of certain inflammatory proteins. These findings support that these substances may reduce inflammation and restore the balance of the immune system.

So, if you’re wondering if you should eat celery daily, I think you know that the answer is most definitely!

Ingredients in Crockpot Chicken Noodle Soup

Onion. Onion adds fragrance and flavor.

Carrots. Carrots provide nutrients and color.

Celery. Celery, chopped into smaller bites, adds a wonderful flavor.

Chicken stock. Either chicken stock or chicken broth will work.

Water. Water helps dilute the chicken stock.

Chicken breasts. Although chicken breasts taste best in this recipe, you can certainly use chicken thighs if you desire.

Salt. Salt adds flavor and seasoning to the chicken noodle soup.

Pepper. Pepper, along with salt, adds flavor and seasoning.

Egg noodles. Egg noodles are smaller and wider and taste best in this recipe although other noodles similar in size would also suffice. These are my family’s go to brand of egg noodles.

How to make the best Crockpot Chicken Noodle Soup

STEP 1: Add the onion, carrots, celery, chicken stock, water, chicken breast, salt, and pepper to a Crockpot and cook for 6 hours.

STEP 2: When it’s done, remove the chicken and shred it with two forks. Return the shredded chicken to the slow cooker. Toss out the onion.

STEP 3: Add the egg noodles and cook for 30 more minutes. Serve warm.
