If you’ve been craving Cajun food and have 30 minutes to spare, then these delicious gluten free Shrimp Foil Packets are IT! If it’s warm out, they can be grilled outside, or alternatively, they can be baked in the oven. Whichever cooking method you decide on, you’ll end up with a savory and healthy dinner that will undoubtedly please the crowd! It’s hard to go wrong when there’s fresh shrimp, parsley, and lemon involved!

Although they can be re-heated, it is not recommended as the shrimp do not reheat well. You can reheat them in the microwave for 1-2 minutes add on top of a salad, or skip the re-heating and eat the shrimp cold on top of a salad. You can also eat them cold, dipped in cocktail sauce.

In addition to high protein, shrimp are packed with vitamins and minerals, including phosphorus, copper, zinc, magnesium, calcium, potassium, iron, and manganese. According to Web MD’s article, shrimp are low in carbs and calories, and are packed with nutrients, making it an ideal weight loss food.

The antioxidants in shrimp are good for your health as these substances help to protect your cells against damage. Studies suggest that the antioxidant astaxanthin helps prevent wrinkles and reduces sun damage. Read Web MD’s post for more information.

Shrimp contains a lot of selenium. Studies have suggested that this mineral prevents certain kinds of cancer, but there has not been enough research conducted to know how effective it really is.

Many people are concerned about the cholesterol in shrimp. In the past, experts have stated that eating too many high-cholesterol foods was bad for the heart; however, modern research has concluded that it’s the amount of saturated fat in the diet that raises cholesterol levels, not the amount of cholesterol in the food you eat.

How to Make the Best Cajun Shrimp Foil Packets

STEP 1: Preheat an outdoor grill to high heat or preheat oven to 425 degrees F. Cut four sheets of foil, about 12 inches long and equally spread the shrimp, garlic, corn, and potatoes over the cut pieces of foil.

STEP 2: Drizzle each foil packet with oil before adding the seafood seasoning, Cajun seasoning, and pepper. Gently toss to combine. Add freshly cut parsley, a squeeze of lemon, and 1.5 tablespoons butter on top of each.

STEP 3: Gently fold the foil packets crosswise to cover the food. Pinch the top and bottom edges together to seal while cooking.

STEP 4: Place the covered foil packets on the grill and cook until just cooked through—about 20 minutes. If using an oven, bake them for 20-25 minutes, until cooked through.

  • 1 1/2 lbs large shrimp peeled and de-veined
  • 3 cloves garlic minced
  • 2 ears corn cut into 4 pieces to make 8 pieces total
  • 1 lb red potatoes chopped into 1-inch chunks
  • 2 tbsp olive oil extra virgin
  • 1 tbsp seafood seasoning such as Old Bay
  • dash Cajun seasoning
  • black pepper freshly ground
  • 1/4 cup fresh parsley chopped
  • 2 lemons sliced into wedges
  • 1/3 cup butter
