There’s something about the taste of warm, soft baked blueberries that makes me so happy! The tartness, combined with the fresh lemon zest and sugar, baked in a luscious Puff Pastry crust, makes all my summer dreams come true. The best way to end a hot summer night is to indulge in a slice of heavenly blueberry lemon galette with a scoop of vanilla ice cream. My Blueberry Lemon Galette recipe calls for a thawed puff pastry, fresh blueberries (frozen blueberries can be used and don’t need to be thawed), sugar, lemon juice, cornstarch, salt, lemon zest, and an egg.

My family and I can’t get enough of this decadent summer dessert. Once you try a galette, you’ll wonder why you ever spent so much time preparing the perfect pie crust when your pie crust is already ready to go!

What’s a Galette?

A galette is a rustic pie that’s made for lazy bakers like me who don’t want to spend a lot of time prepping the perfect pie crust. You don’t even need to prep a perfect pie crust when you have a Puff Pastry that’s equally as delicious! Just add your galette into the center of the Puff Pastry and voila! You have a pie without having to labor over making a crust.

Ingredients in Blueberry Lemon Galette

Puff pastry. Make sure to take your Puff Pastry out at least 30 minutes before you plan to start baking as it takes time to thaw. This is your pie crust and trust me, it’s absolutely divine! You can find Puff Pastry in the frozen aisle of most grocery stores and big box retailers like Walmart.

Blueberries. Use fresh blueberries for the best flavor. For even higher quality, opt for organic blueberries. Frozen blueberries can also be used and do not need to be thawed.

Granulated sugar. Just a quarter cup of granulated sugar gives this dish an irresistible sweet flavor. Of course, you’ll want a tad more for sprinkling on top. Baked sugar is so crispy and delicious!

Lemon juice. You can use fresh or pre-made lemon juice. Feel free to use the juice from the lemon that you zest, or, alternatively, use bottled lemon juice.

Cornstarch. Cornstarch is needed to thicken the blueberry sauce.

Salt. Salt is necessary as it balances the sweet and tart flavors. It also enhances the flavors and helps hold in moisture.

Lemon zest. Sprinkle some on top of your galette for the best lemon and blueberry marriage.

Egg. Whisk one egg for the egg wash that you’ll brush along the crust before you bake your galette. This helps make the crust golden brown and gives the galette a tasty crunch.

How to make the best Blueberry Lemon Galette

STEP 1: In a large bowl, mix the blueberries, sugar, lemon juice, cornstarch, and salt. Let the mixture sit for 30-45 minutes.

STEP 2: Preheat your oven and line a baking sheet with parchment paper.

STEP 3: Use a rolling pin to roll the Puff Pastry dough to about 1/8 inch thick. Use your hands to fold over each of the corners to make it circular, like a pie. Stretch the dough out from the center to make a round 10-inch pie crust.

STEP 4: Pour the blueberry mixture into the center of the Puff Pastry, making sure to leave at least 2 inches around the perimeter. Fold the dough over the center. Sprinkle the lemon zest on top. Use a brush to brush the egg wash around the pie crust. Sprinkle the crust and galette with granulated sugar. Bake in the oven for 20-35 minutes, or until the edges are golden brown.

Tips

Let the Puff Pastry thaw for 30-45 minutes before you start working with it. It will be difficult to stretch it out if it’s frozen. Avoid using frozen blueberries as fresh blueberries are needed for this recipe.

The Puff Pastry dough is very thin and easily tears. When you inadvertently tear it, just pinch two pieces back together to make it one again.

Substitutions

If you aren’t a fan of blueberries, use another type of berry or stone fruit.
