My good friend Brie and I go way back! While I was a college student at the University of California, Santa Cruz, my dorm-mate, Madeline, and I would eat French bread and brie on weekends and up until that point, I had never tried brie. Boy was I missing out. Ever since these college days in the late 90s, I’ve been OBSESSED with brie and bread! In fact, I’m not too picky and will eat brie with crackers, apple slices, pretty much ANYTHING!

My husband was knocking my baked brie recipe up until the point where he tried it. Once he had a bite, he couldn’t stop eating it and ended up eating the other half that I made (and also ate!). The heavenly mixture of baked brie with honey, thyme, rosemary, and coarse sea salt is one of the best appetizers that you never knew you were missing! This is delicious gluten free vegetarian appetizer recipe for those following a gluten free or vegetarian diet. Ingredients in Baked Brie

Brie. Use an 8 to 10 oz. wheel of brie for this recipe.

Thyme. Fresh thyme leaves offer a delicious aroma, nutritional benefits, as well as adding an earthy flavor to the baked brie.

Rosemary. Fresh rosemary adds a Mediterranean flavor and is great for baked recipes such as this.

Honey. Honey bakes into the brie and flavors the inside of the cheese as well as adds to the thyme and rosemary flavors.

Coarse sea salt. A pinch of salt brings out the flavors of the rest of the ingredients.

How to make the best Baked Brie

STEP 1: Take the brie out of the fridge and take off the paper or plastic wrapping up the brie.

STEP 2: Place the brie back in the container it came in or on a piece of parchment paper.

STEP 3: Use a knife to make crisscross slits about ½-inch to 1-inch apart on the brie, cutting into the rind only slightly.

STEP 4: Let the brie sit out at room temperature for 30 minutes. In the meantime, preheat your oven to 350 degrees F/175 degrees C.

STEP 5: If it’s not already on parchment paper, place the brie on a parchment paper-lined baking sheet.

STEP 6: Drizzle the honey over the brie.

STEP 7: Use your hands to gently separate the thyme and rosemary leaves from their stems and sprinkle them over the honey.

STEP 8: Sprinkle the coarse sea salt on top and bake for 30 minutes.

STEP 9: Transfer the baked brie to a serving dish. Serve with your favorite garnishes such as sliced baguette, olives, grapes, apple slices, nuts, cheese, and or crackers.
