Elise McCollister is a food and mom blog devoted to family friendly, low carb, vegetarian, and gluten-free recipes as well as kid’s crafts and activities. My philosophy isn’t about dieting, but about living a healthy lifestyle along with balance.
I was born and raised in southern California and now live in Salt Lake City, Utah, with my husband, daughter, and rescue chihuahua. My husband is Hawaiian and I enjoy cooking many of my mother in law’s delicious Hawaiian recipes.
I am a passionate, self-taught baker and loved baking with my mom as a young kid. Baking desserts with my toddler is one of my favorite pastimes and I refuse to give it up even though I’m on a postpartum weight loss journey. Instead, I prefer to balance baked goods with family friendly, healthy-ish recipes. Not only do I bake and post baking recipes, but I love cooking for my family and post many family friendly recipes.
My mission is to prove that eating healthy and losing weight doesn’t need to be overly restrictive. In fact, I spruce up low carb, gluten free dishes that are just as tasty if not better than their not-so-healthy counterparts. Not all my dishes are low carb or gluten free. I have a mix of kid and family friendly dishes with all sorts of keto, high protein, and healthy-ish recipes.
Since its inception in 2021, EliseMcCollister.com has grown to be one of the most popular family friendly, low carb, and gluten free food blogs on the internet. I have a devoted following among people with children, diabetes and Celiac disease, dieters, and those trying to follow a healthier lifestyle.
As someone willing to share her own personal struggles, I connect deeply with my audience who seek my advice on subjects ranging from postpartum weight loss to intermittent fasting to fitness and holiday meal planning. As the science of human nutrition is slowly beginning to favor a diet low in carbohydrates and higher in protein and fat, I expect my readership to continue to grow.
