Easy peasy peanut butter and jelly tacos are so much fun to eat (and create!). Adding fresh fruit to peanut butter and jelly takes this snack or light meal to another level! If you haven’t ever tried this combination, then you’re definitely suffering from a case of the FOMO which—in case you weren’t aware—is Fear of Missing Out!

These are great for picky toddlers as the fruit is slightly hidden, and what toddler doesn’t enjoy a peanut butter and jelly taco? As a mom, I’ve learned that creating fun food for my toddler makes her much more interested in wanting to touch it and maybe eat it. My husband and I devoured the eight of these that I made and he immediately requested more (I had two and he had the rest)! They’re tasty and PB&J always reminds me of being a kid without a worry in the world!

My insanely delicious Easy PB&J Tacos contain white bread such as soft Wonder Bread, creamy peanut butter, strawberry jelly, freshly diced strawberries, and blueberries, and is done in less than 10 minutes, making it one quick and easy snack or meal! Benefits of strawberries

Strawberries add so much freshness and flavor and are packed with vitamin C and manganese. According to Healthline’s post, they also contain decent amounts of folate and potassium. These red berries are rich in antioxidants and plant compounds which may benefit heart health and blood glucose levels.

Strawberries’ carbohydrates are comprised primarily of fiber and simple sugars and they have a low GI, meaning they are not anticipated to cause blood sugar spikes.

More than 25 different anthocyanins have been found in strawberries, with pelargonidin being most abundant. Pelargonidin is the main anthocyanin in strawberries, responsible for its bright red color. Anthocyanins are typically concentrated in the skin of the strawberries, although anthocyanins also appear in the fruit’s flesh. Further, anthocyanin content is normally proportional to color intensity so as the fruit ripens and the color increases, you can expect to be consuming more beneficial anthocyanins. Anthocyanin-rich foods are linked with numerous health benefits, particularly regarding cardiovascular health.

Benefits of blueberries

Blueberries are a “superfood,” meaning they’re low in calories and are packed with numerous nutrients. According to Healthline’s article, blueberries are believed to have one of the highest antioxidant levels of all common fruits and vegetables. The primary antioxidant compounds in blueberries belong to a family of polyphenol antioxidants known as flavonoids. A particular group of flavonoids known as anthocyanins is believed to be responsible for most of the blueberries’ beneficial health effects. Further, blueberries have shown to directly increase antioxidant levels in the body.

Healthline’s post further reports that blueberries reduce oxidative DNA damage which may protect against cancer and prevent aging. Blueberries are high in antioxidants and as a result, can neutralize the free radicals that naturally occur in the environment which could also damage your DNA and compromise your health.

Ingredients in Easy PB&J Tacos

White bread. Fresh white bread such as Wonder Bread works best in this recipe.

Peanut butter. You can use any type of peanut butter you wish but we prefer creamy.

Strawberry jelly. Strawberry jelly or jam is needed to make these tacos.

Strawberries. Diced fresh strawberries are the best way to top your PB&J tacos.

Blueberries. Fresh blueberries are the final topping on this recipe.

How to make the best Easy PB&J Tacos

STEP 1: Use a pizza cutter or a knife (a sharp pizza cutter is a lot easier to me) to cut all the crust off the bread over a cutting board. Set aside.

STEP 2: Dice 3-4 strawberries into small pieces. Set aside.

STEP 3: Place 1 tablespoon peanut butter on each slice of bread and spread it evenly over the bread.

STEP 4: Add 2 teaspoons jelly on top of the peanut butter. Evenly spread the diced strawberries on top of each slice of bread. Add the blueberries. We used 5-7 blueberries per taco. Fold in half. Arrange on a serving platter and serve immediately.

Notes

If you have leftovers, wrap them in plastic wrap and then foil and chill in the fridge for up to one full day. If left overnight, they will not taste as fresh the next day. I recommend eating these the same day.
