This amazingly delicious Pancake Bacon Finger recipe will make all your breakfast and brunch dreams come true! How much more can your mouth water – bacon, wrapped in pancake batter and cooked crispy while being dipped in a pool of maple syrup?! Um, I’m drooling just thinking about such comfort food deliciousness! Both kids and adults adore these finger foods and they’re the perfect way to make your family smile over weekend breakfast!

My simple recipe calls for bacon, pancake mix, and butter. Use my homemade butter recipe for the best butter you’ll ever taste! Optional ingredients include maple syrup, whipped cream, nuts, chocolate sauce, powdered sugar, fruit, and more. First, you’ll cook the bacon. Then, prepare the pancake batter. Add butter to a large frying pan and ladle the pancake batter on a hot griddle or frying pan, making it wide enough to fit a piece of bacon, with additional room on all sides.

Once the bottom side has cooked, flip the bacon finger over. When they’re done, use a pastry brush to brush them with melted butter. Top with maple syrup, whipped cream, powdered sugar, chocolate sauce (we love this chocolate sauce best), nuts, and any other toppings you wish.

Not only are they adorable, but they taste insanely delicious, especially when dipped in maple syrup! To amplify the flavor, sprinkle powdered sugar over the bacon fingers and brush them with butter before serving.

Ingredients in Pancake Bacon Fingers

Pancake mix. Bisquick or another similar type of pancake mix will work best for these. Make sure to check for ingredients needed to make pancakes. If you’re cooking a vegan recipe, make sure to find pancake mix than doesn’t require eggs.

Bacon. Make sure to cook one pound of bacon which should be 14 slices.

Butter. Add the butter to a frying pan before ladling the pancake batter on the pan to cook.

Toppings. Dip them in maple syrup, chocolate sauce, or any of your favorite pancake toppings. We like to put some of my insanely delicious homemade butter on ours before dipping. You can also sprinkle powdered sugar over them before dipping for a sweeter bite.

How to make the best Pancake Bacon Fingers

STEP 1: Cook one pound of bacon and set it aside. Prepare pancake batter per the pancake box instructions and make sure you prepare enough for 14 pancakes as you’ll have 14 pieces of bacon (most packages of bacon contain 1-ounce slices).

STEP 2: Let the batter sit for about 10 minutes.

STEP 3: Add the butter to a hot griddle or frying pan and set the heat to high.

STEP 4: Ladle the pancake batter on a hot griddle or frying pan and make it wide and long enough to place a piece of bacon in.

STEP 5: Place the bacon over the pancake batter then drizzle additional pancake batter on top of the bacon, making sure to completely cover the bacon. Wait until the bottom side cooks, then carefully flip them.

STEP 6: When they’re done, serve them with butter, maple syrup, powdered sugar, chocolate sauce, or whipped cream. You can also serve them with a side of fruit.

Optional: Use a pastry brush to brush butter over the bacon fingers and sprinkle powdered sugar. Dip them in maple syrup, whipped cream, or chocolate sauce.

Is there a gluten free version?

Just use gluten free pancake mix for a gluten free recipe. I actually prefer the taste of gluten free pancakes over regular pancakes – the texture is so fluffy, moist, and savory! After trying the gluten free pancakes, I’m hooked! We love this gluten free pancake mix the best!

Variations

You can also make these using apples instead of bacon for a vegetarian version. I’ve never made them with apples but it should work. If you try this, please let me know how it comes out in the comment section, below!

Pro Tips

I have tried using sausage links instead of bacon and this recipe did not work so I don’t recommend using sausage in lieu of bacon. Learn from my mistakes!

Notes

These taste best when consumed at the time they’re cooked. I wouldn’t recommend saving leftovers as they won’t taste fresh and reheating the bacon will make it soft and mushy.
