Deliciously cheesy baked potato slices with bacon are the best appetizer or meal as they contain a heavenly blend of potatoes, olive oil, spices, cheddar cheese, freshly cooked bacon, and chives. This is a popular dish among toddlers and families and is the perfect game day or party appetizer! Dip in guacamole, queso bean dip, sour cream, or salsa for the best combinations! My family and I love these and I make them for dinner often. They’re a wonderful family friendly dinner recipe.

The perfect combination of potatoes, cheese, and bacon melt in your mouth with each savory bite. I promise you can’t eat just one cheesy potato bite! You really don’t need a dip for them, but I found that my Homemade Ranch Dressing and guacamole are my favorite dips with these scrumptious potato slices.

Benefits of Potatoes

Believe it or not, potatoes are a healthy veggie albeit starchy. According to Healthline’s article, potatoes are antioxidant rich and are packed with compounds such as flavonoids, carotenoids, and phenolic acids. These compounds work together to neutralize free radicals which are harmful molecules that naturally develop in the environment.

Potatoes may improve blood sugar control as they contain a starch known as resistant starch. Resistant starch is not fully broken down once ingested. Rather, it travels to your large intestine, where it is a source of nutrients that contain beneficial gut bacteria.

Ingredients in Cheesy Baked Potato Slices with Bacon

Potatoes. Russet potatoes work best in this recipe.

Extra virgin olive oil. Opt for high quality extra virgin olive oil when cooking this recipe.

Italian seasoning. Italian seasoning contains the perfect blend of herbs to season the baked potato slices.

Oregano. Use dried oregano to season the baked potatoes.

Salt. Salt blends with pepper and Italian seasoning to season these baked potatoes.

Pepper. Freshly cracked black pepper tastes best.

Cheddar cheese. You can use any kind of cheddar you wish; we prefer mild or medium cheddar cheese. Make sure to freshly grate your cheddar as the store-bought pre-shredded variety of cheddar contains additives that prevent it from clumping, therefore sacrificing quality and taste.

Bacon. My go-to bacon is Costco’s Kirkland refrigerated brand, but any brand of bacon will suffice.

Green onions. Green onions add color, nutrition, and a crunchy texture. According to Very Well Fit’s post, green onions (also known as chives or scallions) are packed with vitamins A, C, K, and folate, and contain compounds that protect against cancer. Studies show a link between green onions and a reduced risk of myeloma, gastric, colorectal, endometrial, lung, and prostate cancer.

How to make the best Cheesy Baked Potato Slices with Bacon

STEP 1: Preheat the oven to 400° F. Line a baking sheet with parchment paper or foil.

STEP 2: After chopping the potatoes, lay them on the prepared baking sheet. Use a pastry brush to spread olive oil over both sides of the potato slices. Evenly sprinkle the Italian seasoning, oregano, salt, and pepper over the potatoes. Remove from the oven and reduce the temperature to 350° F.

STEP 3: Sprinkle the cheddar over the potatoes. Add the bacon on top and bake until the cheese is melted. It melts quickly so watch them closely. Garnish with the green onion and serve warm. Serve with sour cream, guacamole, salsa, ranch dip.
